CUCUMBER PEACH SALSA

3 whole large peaches, peeled and diced into ¼” pieces | |
1 whole cucumber – peeled, halved, de-seeded, and diced into ¼” pieces | |
1 medium red onion – diced | |
1 bunch (about ½ cup loosely packed) finely chopped | |
Juice of 1 lemon (about ¼ cup) | |
3-4 tbsp EVOO | |
1 tbsp rice wine vinegar | |
1 tsp honey | |
Salt and pepper |

This fresh, tangy, and sweet salsa is the will be the perfect addition to your appetizer table or a great accompaniment to your favorite fish dish. When I come home from the farmer’s market every Saturday, I like to put this together and have it with fresh tortilla chips and a cocktail on the back patio. The best way to enjoy peak summer produce on a late summer afternoon.
Depending on your guest list, and on your appetite, you can add a little spice as well – add about ½ of a diced jalapeno or serrano pepper for every 4-6 servings, more if you like to bring the heat!

Notes
1 Combine the diced cucumber, tomato, onion, and basil in a medium bowl. Mix well
2 Add the peaches, and gently stir so as to not bruise or damage the peaches
3 Mix together the EVOO, lemon juice, and rice wine vinegar. Pour over salsa mix. Gently combine
4 Serve with tortilla chips, or over your favorite fish dish
